Phant + Doggie = Love

In our house, one sister is the Elephant Queen (best friend is "Phant") and the other is the Doggie Queen (best friend is "pink doggie"). So when I saw this video it made me smile.

Happy Birthday Happy!! Here is The Happy Cupcake...

Chocolate Cupcake with Raspberry Mouse Frosting



This was inspired by those Ghirardelli chocolate squares with raspberry filling. Jay thought we should definitely go chocolate for Happy, and for some reason my mind got stuck on those Ghirardelli squares. I cheated used a boxed Devil's Food cupcake mix, but made up for it with this frosting. I think the girls agree (still fighting over the spoon) that this is the yummiest frosting so far. I found the recipe for raspberry mouse frosting here. Her pictures show a much smoother and seed-free pink mouse, not sure what I did wrong. But it is delicious!

Excuses

I'm not sure if I remember how to blog, it's been a while. I don't really know why.

I guess over the holidays there were just a lot of...well, holidays.

Christmas Morning

One of Jack's noisiest Christmas treasures. Protects him from those corners though.


The kids were stuck in a revolving door of ear infections, sinus infections and croup. Amanda is still stuck on ear infections, one more round of antibiotics starts today. Jack lost too much weight from his little body fighting constant croup. X-rays confirmed that he hadn't swallowed any toys; he was ultimately put on an Advair inhaler and Singular. We also did our best to put him on a solid fat boy anti-diet and he is officially back on the weight charts! He is doing much better.

Jack got a "Lloyd Christmas" haircut and can make the most annoying sound in the world.

But wait, I have other excuses for blog neglect.

During the holidays I discovered facebook and Wii. You can't deny the power. I really had no chance. Oh, and I read all four Twilight books like a 15 year old girl on crack. Jay was home for two weeks so I also had to occasionally look busy. We do a mean duet of Islands in the Stream on Wii American Idol.

Now we are all back to our regularly scheduled programming. The kids are as sweet as ever. Elizabeth was actually excited for school to start again and she is spelling and reading more every day.

The GIII Cupcake

Happy Birthday George! A tad late, but here is the GIII Cupcake...

Guinness Chocolate Cupcake with Chocolate Cream Cheese Frosting

When I first started this high cupcake honor, George predicted that his would have something to do with beer. I hadn't thought about beer until he mentioned it, but I knew immediately that he was correct.

The smell of the Guinness and chocolate baking together was amazing. Wow! The cupcake itself is delicious, but I'm not sure about the frosting. All together it is very rich. Or maybe the frosting just doesn't taste as well when you're also drinking the left over Guinness. Hmmm.

I used this recipe. The cupcake delivery will have to wait until tomorrow. Nighty nightzzzzzzzzzzzzzz.
